PALEO BREAD SCOOP

 

For all our conflicted bread lovers out there, here’s a little something for you to get you through your days. This is some good SCOOP for you, and a definite game changer for me! There are  some of us out there who have a difficult time digesting grains; a painful, stomach crunching awful time. Many of us want to reduce our intake of wheat consumption, ( that’s me! ) and some of us who honestly do not want to eat carbs! Either way, you are making a choice based on what makes you feel good, and that is what is fundamentally important; what works for you!

Well, this works for me.  Julian Bakery has created the closest thing to perfection in the no wheat/gluten-free/ grain free bread category I have come across. Their Paleo bread is hands down the best replacement for wheat bread I have ever found . Eight ingredients , no sweetener of any type added and offered in coconut flour or almond flour based, you are really going to be happy that this bread is here!  Nothing that is not natural and wholesome is added to their breads.

I personally believe in real bread. Fresh baked bread with pronounceable ingredients like salt , eggs, yeast and flour! I do not believe in low-calorie breads, because it comes with too many artificial ingredients. This bread is so minimally processed and the ingredients are so fresh that it needs to be kept in the freezer section! Yes, this excites me! I keep it in the refrigerator once I get home , because I go through it quickly.

This morning I had some French toast made with Paleo Almond Bread. Almond Flour French Toast, does it get any better? I love the nutty, warm flavor. A little SCOOP for you; because this bread doesn’t crisp up , you need to lay it flat when toasting it. I give it a quick toast in the frying pan to warm it up or wrap it in tinfoil to toast it in the toaster.

This line of food is not so easy to find in the supermarkets, so if you can’t get to a health food grocery store, order the bread directly on-line from Julian Bakery where they will ship it to you frozen. They also carry wraps, chocolate, and waffles too! This is such a bread breakthrough! I buy my bread at Mrs. Greens in Mount Kisco.

Ingredients: Purified Water, Almond Flour, Organic Coconut Flour, Egg Whites, Psyllium Seed Powder, Organic Apple Cider Vinegar, Potassium Bicarbonate, Sea Salt…


Healthy Scoop –  Look at these ingredients! The apple cider vinegar is being used as a natural preservative due to its proven antibacterial properties, and Psyllium Seed is a natural bulk forming laxative that’s used to treat Crohn’s disease.

OATMEAL DARK CHOCOLATE SCOOP

NO SUGAR OATMEAL DARK CHOCOLATE COOKIES

In my third attempt to create the perfect HEALTH cookie bomb, I have come up with a recipe today that I am so excited to share with the world. If you are on a quest to give up sugar without giving up the sweet life, then give these simple cookies a try!

PRE-HEAT YOUR OVER TO 350° and get out a big mixing bowl! This will take you five minutes to put together!

  1. 4 CUPS OF OATS
  2. 1 EGG
  3. 1/2 CUP OF EGG WHITES
  4. 1/4 CUP OF MAPLE OR RICE SYRUP
  5. 1/4 CUP OF COCONUT SUGAR
  6.  A PINCH OF SALT AND A TABLESPOON OF CINNAMON

CHOCOLATE SAUCE

HERES HOW YOU MELT CHOCOLATE ON THE STOVE:

* FILL A SMALL POT WITH WATER , PLACE A GLASS BOWL  INSIDE THE STEAMER. MIX UNTIL ITS MELTED.

ADD: 4/5 LARGE SQUARES OF DARK UNSWEETENED CHOCOLATE, 1/4 CUP OF OLIVE OR COCONUT OIL and 1/4 CUP of UNSWEETENED ALMOND MILK.

ADD IT ALL TOGETHER,  ROLL SOME OATS INTO BALLS AND BAKE IT FOR 15 MINUTES.

*I add a couple of teaspoons of Chia, Maca and Maqui powder to super charge these cookies! 

SUPER COOKIE NUTRITIONAL SCOOP:

CHIA – Loaded with fiber, protein, and omega fatty acids.

MACA -This root provides energy, stamina, libido function, endocrine support due to its amino acids and  minerals.

MAQUI POWDER- Vitamin C, Iron, anti aging super fruit!

DARK CHOCOLATE- The king of nutritional value! Dark Chocolate has more antioxidants per serving than half a cup of berries! Fiber, Magnesium, Iron, Copper. This is plant medicine at its purest form. imageFor me, when I think of eating Indian based foods, I think of eating out. I never brought those flavors home to mix up our meal routine, except if I found a good curry chicken salad from the store! It always seemed so exotic and so complicated, that is until I discovered these sauces; Maya Kaimal Coconut Curry Simmer Sauce ! You need to try these and you must keep them in your refrigerator and have them on hand for anything you can think of! This all natural flavored sauce, or any one of their simmer sauces are delicious, and  when added to any protein or vegetable dish will make your taste buds explode! The entire line is filled with exotic, warm, and deeply nourishing flavors. These sauces can be found in your specialty aisle of the grocery store, health food store, or online. The most important part of this scoop is that every single ingredient is real whole food! The words can be pronounced by our 6-year-old child which means  this sauce is not only yummy, but deeply nutritious.  Its simple to use, delicious, and you will feel like a kitchen success, and that is the CURRY SAUCE SCOOP!

Simple Meal Under 5 minutes

  • Cubed cooked chicken (or whatever you prefer)
  • Pour the sauce over the chicken and simmer in the pan
  • DONE! and you feel FANCY!
  • Pre- made bagged broccoli slaw mixed with your favorite dressing for the side salad

This was such a healthy, warming meal and I wound up making an accidental super low – carb meal without even trying!  There was no deception in the ingredients, and I didn’t “cook” a thing. This took less than 5 minutes to prepare and tasting so yummy! I made a crispy slaw on the side with ginger dressing.  The sweet, fresh crunchiness paired so well with the smoky heat from the curry. Buy broccoli slaw when you want to eat a salad, but you’re not in the mood to make a salad!

Healthy Scoop:

Turmeric, the ingredient which curry is made from has been used to treat inflammatory conditions for centuries.  Curcumin is derived from the turmeric root and the powder form of curry is a huge source of antioxidant benefits!  Curcumin protect against free radicals, so this helps protect us from diseases, illness, and keeps our blood sugar levels low. There are recent studies that indicate that turmeric root also can help prevent Alzheimer’s disease! Now wouldn’t that be just incredible! The right food really can be a         “farm-acy“!

French Yoga ClipYes it is a hair clip that I am sharing with you! These are called French Yoga Clips and they are the greatest hair clip out there! SIMPLE ROASTED CHICKPEAS

chickpeas Seriously, the entire point of simple is to keep it short and easy. Sometimes we don’t even want to chop an onion, right? If you like chickpeas or hummus, you may love this as your new favorite snack. Add it to salads. Eat it whenever you want really. Who cares? 1/2 a cup in a snack baggy to go is perfecto! This is what it looks like in the bowl. I added Rosemary because I love Rosemary, you can add whatever you want.

FIVE STEPS: PROMISE
1. Set your oven to 400degrees
2. Drain a can or two of chickpeas and pat it dry with a paper towel
3. Toss it with EVOO ( I prefer truffle oil) parmeson, salt and pepper
4. Roast if for 30 – 40 minutes and it crisps up..
5. Yum and Done!

Simple Health Scoop:

Fiber controls blood sugar and helps with digestion. The  protein and magnesium for energy. Garbanzo beans contain phytochemicals which are proven to protect against bone loss and hot flashes!

Too bad I’m the only one in the house who eats this. But you know what. Its okay to only take care of yourself and just you alone:) The kids will come around eventually and hop on board to good health as long as you keep showing them how important it is to you!

AVOCADO SCOOP

Welcome to my first blog post about avocados! Why this product for my introduction? Avocados are the yummiest and can be used on anything; dip,  eggs, across a salad, with meat or veggie burgers. I could eat an avocado every single day, but I don’t, until now… Wholly Guacamole  has got to be one of the most genius creations in the 100 calorie field of food! You may not remember this, but there was a time not too long ago when you couldn’t find avocados in the grocery stores regularly. They were considered an exotic fruit. They are so delicious , creamy, sweet and savory and can accompany a variety of food items in many different ways. I find avocados to be the most versatile of all fruits, because they are a breakfast , lunch and a dinner food.   We all know that avocados are incredibly nutritious; loaded with healthy fats, fiber, potassium and healthy cholesterol lowering benefits, but its hard to figure out how to incorporate them into our daily diet on a smaller portion. Plus, they can be tricky to cut up as well.  Wholly Guacamole happens to be a tremendously healthy pre- packaged item with ZERO processed ingredients. That means all fresh, all good stuff.  I make an entire pack of WHOLLY GUACAMOLE last for two meals. A little of this nutritious powerhouse goes a long way.

BREAKFAST:

  • A spread on toast or your starch of choice works well.
  • Eggs and a scoop of guacamole is savory.
  • Are you a smoothie drinker? Add it in. If you don’t like avocados, add it in anyway , its so healthy and you wont taste it mixed in with your other ingredients.

LUNCH / DINNER:

  • Salad. Its a fruit, that tastes like a vegetable and these packs only have 5 grams of carbohydrates per serving with 3 of those grams being fiber. You are good to go adding this fruit to any salad, every day!
  • Sandwich of choice; A thin layer on your all natural real bread  goes very far!
  • Good old fashion dip for chips and vegetables!
